Thomasina Miers, Grilled!

Mother of two Thomasina is the co-founder of Wahaca alongside business partner Mark Selby. Their latest venture is Burrito Mama – a spin-off from the Mexican chain, due to launch soon at One New Change. Thomasina fell in love with Mexican food aged eighteen on a visit to the country, since then she’s won Masterchef back in 2005, and had success with several books, and of course the ever-expanding Wahaca.

If money was no object, what kind of restaurant would you open and where?
I think I would go and live in California and open a wonderful take on the River Café – my kind of River Café with Mexican food, not Italian, seasonal ingredients, all lovingly prepared. I’d have to go out there for the ingredients – sadly in the UK we can’t get the right kind of Mexican ingredients to do really high-end because we lack the sunshine – obviously the sunshine would be a bonus too!

If you had to eat the same meal every day for the rest of your life, what would it be?
I can’t think of anything worse! I eat different things every day of my life. Variety is the spice of life. I don’t know what I’d do. I’d arm myself with an arsenal of chillies and spices to change the flavour of whatever I had.

What do you keep on your bedside table?
Books, speakers, water, a notepad.

When is the last time you had a McDonald’s?
I had the most delicious Big Mac about a year ago when pregnant and craving one…

What is your career Plan B?
I used to want to be a dancer but I think that would no longer work!

Is there anything on the menu at Wahaca that you ever cook at home?
Guacamole – all the time!

Is there any food that you can’t stand?
No, I pretty much like to eat everything.

Do you have any recurring dreams?
Nope.

Who would be your ideal dinner date?
My husband, deliciousness that he is.

What is the one object you can’t do without?
My phone – to stay in touch with my babies, my friends, my family.
