One of the latest restaurant openings at Bluewater is the slightly eccentric and quirky Bill’s. If you haven’t eaten in or heard of Bill’s before, where have you been hiding? They’re everywhere! Bill Collison, the founder of Bill’s has had an amazing journey (yes, he really did name the restaurant after himself).

From the humble beginnings of a shed-sized green grocers in Lewes to the launch of the first Bill’s cafe and produce store in 2001. There are now 53 branches nationwide, that’s an average of just over four branch openings a year, so they are obviously doing something right! – See more here…
